ATKINS FRIENDLY RECIPE - Tuna Patties

Another Atkins recipe that I've tried few times. Still loving how simple it is and how delicious it smells...hmmm!! Hahaha.. check the recipe out. I might have seen it from blogs somewhere but tweaked a little here and there according to what I have in the fridge at the moment.


ATKINS Tuna Patties

Ingredients:
A can of tuna (i opted for tuna chunks in water or olive oil), drain the water and oil.
1 egg
Onions, sliced and diced
White pepper
Coriander leaves or spring onions, chopped
Salt to taste
Butter


Method:
Mash all the tuna chunks and combine with egg and onions. Stir everything well in a bowl. Add in the pepper, salt and the leaves according to your taste. Form a small ball in your palm, making sure that they stick together. Flatten the ball a bit, again, according to your preference because some might love thin patty and some might like it thick. Place the patties on a non-stick pan with a little bit of melted butter. Cook until brown and then flip it over and cook the other side.

Serve with lettuce, cherry tomatoes, and kewpie mayo.
